Many people assume every vitamin is absorbed the same way. In reality, some nutrients need the help of food to maximize absorption, while others can be absorbed effectively on their own.
When you’re on your feet all day tackling the demands of modern life, worrying about nutrient absorption should be the last thing on your plate. Think of food as an absorption insurance policy. Without it, some vitamins can slip through the digestive process before your body has a chance to fully absorb them. Food helps create the right environment for those nutrients to be absorbed and put to work.
To understand why food matters, it helps to know that vitamins fall into two main categories.
Water-soluble vitamins: Exactly as it sounds – these vitamins can be dissolved in water and are incorporated into the bloodstream for delivery to tissues and organs (Agha et al., 2025; Wang et al., 2025). Examples of water-soluble vitamins include vitamin C and the B-vitamin family, which act as coenzymes in crucial biochemical mechanisms such as energy and protein metabolism, methylation, and antioxidant function (Yaman et al., 2021). Because these vitamins dissolve readily in water, they are generally absorbed efficiently without needing dietary fat.
Fat-soluble vitamins: Rather than dissolve in water, fat-soluble vitamins dissolve in dietary fats and can be stored long-term in the liver and adipose (fatty) tissue (Andrés et al., 2024). This category includes vitamins A, D, E, and K, which help support the structure and integrity of cell membranes, eyes, blood and bones (Andrés et al., 2024). Much like oil and water, fat-soluble vitamins do not absorb well in water, and need a little extra assistance for a smooth delivery to target tissues and organs.
While water-soluble vitamins are generally absorbed without much assistance, fat-soluble vitamins benefit from being taken with food – especially meals containing healthy fats. Eating food triggers the release of bile acids, which help your body absorb these nutrients more efficiently (Schmidt et al., 2010). For fat-soluble vitamins, eating meals that contain some dietary fat can significantly improve absorption (Schmidt et al., 2010).
Don’t let your fat-soluble vitamins be stood up at a dinner date. They absorb best when food shows up too!
